Dry Rub Beer Can Chicken

Ingredients
  • 1 whole chicken (4-5 pounds)
  • 1 can of your favorite beer
  • Kosmos Q Beer Can Chicken rub
  • Wood pellets for Traeger (Hickory or preferred flavor)
  • BBQ-Aid 5 in 1 Smoker Set
  • Fresh Rosemary

Instructions

  1. Preheat your Traeger grill or smoker to 375°F (190°C) using your favorite wood pellets.
  2. Pat the chicken dry with paper towels.
  3. Rub the entire chicken with a light coat of olive oil to help the seasoning adhere.
  4. Generously apply Kosmos Q Beer Can Chicken rub or your favorite bbq rub to the entire surface of the chicken, including inside the cavity. Ensure even coverage.
  5. Insert Meater 2 Plus into the thickest part of the chicken breast. 
  6. Open the can of beer and take a few sips (or pour out about 1/4 cup). Pour the beer into the beer can chicken roaster. 
  7. Add more Kosmos Q rub to the beer and some fresh rosemary. 
  8. Carefully lower the seasoned chicken onto the beer can holder, inserting it into the cavity. The chicken should stand upright with the legs at the bottom and the beer can holder supporting it.
  9. Place the beer can chicken on the preheated Traeger grill or smoker grates and cook for approximately 2 to 2.5 hours or until the internal temperature reaches 165°F (74°C) in the thickest part of the breast. 
  10. Allow the chicken to rest for about 10 minutes before carefully removing it from the beer can holder. 
  11. Serve and savor the flavorful Beer Can Chicken!
